Ohhh. I have a really good recipe for ham bbq. Using chipped(shaved) ham and grape jelly. It must be good, because I don't even like ham. Now, I've gotta go find it.:sunshine2:

I read one on the disforum one time, and tried it, it was pretty good. It's with chicken breast, orange soda, and soy sauce. Very Yummy, kinda taste like teriyaki chicken. You shred the chicken and serve on white rice. :p

My current favorite is for a chuck roast or any other type of roast would probably work as well.
Season the roast with salt, pepper, and onion powder. Heat olive oil in a large pan or skillet, brown the roast on both sides (probably 7 -10 minutes a side). Transfer to crock pot. Add 1 or 2 cloves of minced garlic to the pan and brown, then add about 1/ cup water to help get up all the browned parts stuck to the pan. Pour it all into the crock pot. Add about 1 cup beef broth and 1/4 cup tomato sauce to the crock pot. Cook on low 6 - 8 hours.

I :heart: :heart: :heart: my crockpot!!! I use it 3-4 times a week.
My families fav's are:
1. Put chicken breast in (i usually toss them in frozen) you can do this with pork ribs too...cover with 1 can of diet coke (any soda will work)and cook on low for most of the day. Take them out, drain the liquid, put back in the crockpot and add bbq sauce. cook on low until heated. (we had this one last night.) Makes yummy sandwiches or BBQ chicken pizzas.
2. put chicken breast in...cover with either 1 jar or salsa or 1 can of enchilada sauce. Cook on low for the day..shred and wrap in tortillas with cheese.
3. put chicken breast ( or sometimes i use chicken sausage) in (add some peppers & onions)...cover with jar of spag. sauce..cook on low...serve over pasta.
(yes, we eat a LOT of chicken:) )

Oh I love my crockpot. I'll post a few of my favorites tonight - BBQ Pork and Saurkraut, Sweet and Spicey Italian Chicken, Chicken Jambalaya, Chicken Tortilla Casserole.
If anyone needs a recommendation I have the Rival one from Target's website (it was $50) with the auto-shut off/keep warm setting. It is fabulous for when you have to go to work all day or run errands. You don't have to worry about over cooking since it will turn off once its done.

This is from Fix it and Forget it! Lightly. (I think its available on Zooba)
Fruited Pork Chops - 6 ww pts.
Makes 6 servings (I used a family pack and came up with 9 servings!)
3 tbsp all purpose flour
1.5 tsp dried oregano
3/4 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
6 lean boneless pork loin chops (bone-in works as well)
1 tbsp olive or canola oil
20 oz can unsweetened pineapple chunks
1 c water
2 tbsp brown sugar
2 tbsp dried minced onion
2 tbsp tomato paste
1/4 c raisins
1. In a large resealable plastic bag, combine flour, oregano, salt, garlic powder, and pepper.
2. Add pork chops one at a time and shake to coat.
3. Brown pork chops on both sides in a nonstick skillet using oil. Transfer browned chops to slow cooker.
4. Drain pineapple, reserving juice. Set pineapple aside.
5. In a mixing bowl, combine 3/4 c reserved pineapple juice, water, brown sugar, dried onion, and tomato paste. Pour over chops.
6. Sprinkle raisins over top.
7. Cook on high 3-3.5 hours or until meat is tender and a meat therometer reads 160 degrees. Stir in reserved pineapple chunks. Cook 10 minutes longer or until heated through.
Per serving: 280 calories, 9g fat, 65 mg cholesterol, 350 mg sodium, 28g carbs, 24g protein

Another one from Fix it and Forget it Lightly that I had posted on another board. When I make it again I might play with it a little as you could probably get away with just 5 tortillas or maybe 8 but not all 10 and add some cheese to the recipe rather than all at the end ~ not 100% sure why an egg (I used an egg beater so it was only 30 calories) was needed so I might take that out and replace it with ff cheese.
Chicken Tortilla Casserole - 6 WW Pts/srvg
4 whole boneless, skinless chicken breasts cooked and cut into 1" pieces reserve about 1/4 c of broth **
10 6" flour tortillas, cut into strips about 1/2" wide x 2" long
2 medium sized onions, chopped
1 tsp canola oil
10 3/4 oz can of ff chicken broth
10 3/4 oz can 98% ff cream of mushroom (or chicken) soup
2 4oz cans mild green chilies, chopped **
1 egg
1 c low-fat cheese, grated
1. Pour reserved chicken broth in slow cooker sprayed with non-fat cooking spray. **
2. Scatter half the tortilla strips in bottom of slow cooker.
3. Mix remaining ingredients together, except the second half of the tortilla strips and cheese.
4. Layer half the chicken mixture into the cooker, followed by the other half of the tortillas, followed by the rest of the chicken mix.
5. Cover. Cook on low for 4-6 hours or on high for 3-5 hours.
6. Add the cheese to the top of the dish during the last 20-30 minutes of cooking.
7. Uncover and allow casserole to rest for 15 minutes before serving.
Makes 8-10 servings. I got 8 out of mine. 280 cals, 7gms fat, 65 mg cholesterol, 28gms carbs, 2 gms fiber, 23gms protein.
** I used a cooking liner and did not spray with the nonstick spray. Part of the bottom layer of strips did stick and burn. Next time I am going to use the nonstick spray with the liner and add another 1/4c of broth at the bottom layer. I also boiled the chicken for about 30 mins and shredded it. Subbed 1 can rotel for the 2 cans of green chilies. Tasted very yummy.

Here is one I use all the time:
Chicken breasts, diced to bite size pieces
1 Large can of diced assorted veggies
1 container of chicken broth
Dump it all in the crockpot, add salt & pepper, cook until done.

Here's my favorite easy slow cooker recipe for fall Saturday afternoons :love: The apples can be used too for adding to oatmeal, making shortcakes, whatever you like. Also makes the house smell great while it's cooking :)
Chunky Slow Cooker Applesauce
8 to 10 large tart apples, peeled and cut into chunks
Sugar substitute equivalent to 1/2 to 1 cup sugar (or you can use sugar, the amount you use should be based on the tartness of the apples)
1/2 cup water
1 teaspoon ground cinnamon
Combine all ingredients in crock pot and cook on low for 6-8 hours (until apples are tender). Serve with vanilla ice cream or frozen yogurt, if you'd like.

We eat alot of chicken also and I have never tried this. I just bought 2 large packages of chicken for this week. I am going to give this a try. Sounds Yummy.

This recipe was taken from the Best of the Best from QVC Cookbook....It was originally done in the oven but I've always made them in my crockpot.
BEST EVER BQ RIBS
1 family pack of baby back ribs
1 (18oz) bottle hickory smoke BQ sauce
1 (14oz) jar spaghetti sauce
1-1 1/2 cups brown sugar (I usually use 1 cup)
I boil my ribs for about 15 min, then drain and throw everything together in crockpot and cook about 4-6 hours. DELICIOUS AND SO TENDER!!!! :love:

My favorite crock-pot recipe is one that I think is rather popular, but hasn't been posted here yet. It 3-envelope pot roast.
All you need is:
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope Brown gravy mix
Pour them all in with your roast and a liquid of your choice (I just use water, but you can use broth), cover and cook.
I sometime mix the mixes together first, then pour them on.

Here are two REALLY easy recipes. I LOVE my crock-pot.
Crock-Pot Mock Lasagna
1 jar spaghetti sauce
16 oz. cottage cheese
12 oz. shredded mozzarella
1 egg
dash or two of pepper
16 oz. penne pasta
water
In a bowl mix together cottage cheese, egg, pepper, and 3/4 of the mozzarella. Spoon a little sauce into bottom of cooker, then layer pasta (dry), sauce, and cheese mixture, ending with sauce. Fill sauce jar about 1/2 full of water. Pour water over "lasagna". Top with remaining mozzarella. Cover and cook on high for 3 to 4 hours.

Fajita Soup
1 jar salsa
1 envelope dry fajita seasoning
1 large can chicken broth
1# boneless chicken breast
sour cream
tortilla chips
shredded cheddar cheese
Put chicken, salsa, broth, and seasoning in cooker. Cook on high about four hours. When chicken is cooked, remove and shred using two forks. Return shredded chicken to soup. Serve soup with sour cream, chips, and cheese.

Ok, my guys love pulled pork sandwiches. With this I can make about 3 meals. I take a large pork roast, can of beer, seasonings,onions and fresh garlic, and top it off with water! I cook on slow for about 8-10 hours! The first night they eat it with their veggies, when dinner is done I shred all the pork roast and put it back into my clean crock pot. I then ad a whole bottle of baby ray's bbq sauce and cook on slow. They now have lunches and dinner for the next day!! I usually have enough to freeze for when we have to be at the ballfield or soccer field for a quick dinner too!!! The alcohol cooks off but leaves a great taste! Especially when you add the bbq sauce!! Super tender and just fall apart!

This isn't so much a recipe, as a technique, but try this if you haven't:
In your crock-pot put a jar of chili sauce and a small jar of grape jelly. Let that melt together while you make small meatballs (however you make them) in a skillet on your stove top. Add the meatballs and some smoky cocktail weinies to the chili sauce/grape jelly sauce and let that cook together a couple hours. It is delicious!

Ummm...I'm not sure. I'm guessing it's about 24 oz. ....but the typical size of like Classico, Prego, etc.
I will be trying the mock lasagna too! :)

I love the crock pot because it is so last-minute friendly. I don't always remember to defrost my meat and you can throw frozen meat in the crock-pot in the morning and go to work and come home to a great dinner.
For almost any cut of beef, especially the tough ones, not suitable for grilling, use a combination of:
beef broth or boullion
packet of onion soup mix
canned tomatoes(or Rotel if you want a Mexican flair, Italian, etc...)
use a bay leaf, fresh or dried garlic, etc... to season
cook until the meat is falling apart and serve with noodles, rice or potatoes
You can add vegetables later in the day, too.
This works really well for a pot roast,
for day two we make pot roast soup
Strain the leftover pot roast liquid(it will look nicer)
Add beef broth as neccessary to stretch
Chop up leftover roast and the bits that were in the pot
add carrots, canned or fresh(they take longer)
add frozen green beans(canned just aren't as tasty)
cooked rice or noodles, they soak up too much broth if you cook them in the crock pot.
It's wonderful!

This is a favourite of mine.
Curry Chicken, Brocoli casserole
1 cup of long grain rice (uncooked)
3 cups of water
1 tbsp curry powder
1 can (small) of cream of chicken (or brocoli) soup (use low fat/sodium if you can get it)
2 cups chopped, cooked chicken (white meat is best)
1/4 tsp of garlic powder
1 tsp onion salt
1 cup grated chedder cheese (can use low or fat free)
16 oz bag frozen brocoli, thawed
Combine all ingredients except brocoli in slow cooker
cook on high 3 - 4 hours or low 6 - 7 hours
Add brocoli one hour before end of cooking time, stir
I like to add a little cheese on top when I serve it. So yummy!

The chicken broccoli curry sounds good.
I just made this one today:
Spicy Italian Chicken - 4 WW points per serving
1 Medium Onion, Chopped
1/2 c fat free Italian Dressing
1/2 c water
1/4 tsp salt
1/2 tsp garlic powder
1 tsp chili powder
1/2 tsp paprika
1/4 tsp black pepper
6 boneless skinless chicken breast halves
2 tbsp corn starch
2 tbsp cold water
1. Spray the inside of a slow cooker with nonfat cooking spray (or use a liner :) ). Combine all ingredients except chicken, cornstarch, and cold water in slow cooker.
2. Add chicken. Turn to coat.
3. Cover. Cook on low for 4-5 hours.
4. Remove chicken and keep warm.
5. In a saucepan, combine cornstarch and cold water.
6. Add cooking juices gradually. Stir and bring to a boil until thickened.
7. Pour sauce over chicken and then serve over noodles or rice.
Per serving: 180 cals, 3.5 gms fat, 7 gms carbs, .5 gms fiber, 27 grms protein.

Chicken Jambalaya
1 lb. uncooked, boneless skinless chicken breast, cubed
3 c fat free chicken broth
3/4 c water
1.5 c uncooked brown rice
4 oz reduced fat smoked turkey sasauge
1/2 c celery with leaves thinly sliced
1/2 c onion, chopped
1/2 c green bell pepper, chopped
2 tsp Cajun seasoning
2 cloves garlic minced
1/8 tsp hot pepper sauce
1 bay leaf
14.5 oz can no salt diced tomatoes, undrained
1. In a large nonstick skillet, saute chicken 2-3 minutes.
2. Stir together remaining ingredients in slow cooker.
3. Add sauteed chicken
4. Cover. Cook on high for 6 hours.
Per serving: 370 cals, 7gms fat, 42 gms carbs, 4 gms fiber, 34gms protein.
I tweeked this recipe a bit. I used 4 c of chicken broth instead of the 3 cups and 3/4 c of water. I also did 1/2 a package of turkey sausage (7oz) instead of just 4 oz. I also did 1 cup onion, bell pepper, and celery (since Kroger sells them prechopped). It ended up being 9 1-cup servings.

2 c low sodium BBQ sauce
1 c water
2 lbs thinly sliced lean pork chops, trimmed of fat
2 lbs sauerkraut, rinsed
1. Mix together BBQ sauce and water.
2. Combine BBQ Sauce, pork chops and sauerkraut in slow cooker.
3. Cover. Cook on low 8-10 hours.
Per serving: 300 cal, 11 gms fat, 18 gms carbs, 3 gms fiber, 32 gms protein.
Made 6 servings and was about 6-7 WW points per serving.

I picked up everything at the store to make the Tortilla Casserole, the Fruited Pork Chops, and the Barbeque Chicken. So we will be having 3 crock pot meals this week!!!
One of my favorite things to make is the small ham with a can of sprite. I stud the ham with cloves and then cook it with the can of sprite poured over it. Close to when it is done, I mix up willy nilly a little glaze on the stove--some orange juice, honey, cinnamon, ham drippings. Then I pour it over the ham in the last half an hour and reserve about half of it to take to the table. It works out pretty well!

You might want to add a bit more liquid to the Tortilla Casserole or spray it really well on the bowl as those darn things stuck to the side after a while. The Liners are very important in the clean up process for that dish. Its yummy but would be horrible to clean up if you didn't use it. The fruited pork chops were no problems.

Here's a recipe that even my husband can (and does) make :)
SLOW COOKER SPLIT PEA SOUP
• 1 package (16 ounces) dried split peas
• 2 cups diced fully cooked lean ham
• 1 cup diced carrots
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 2 bay leaves
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 5 cups boiling water
•
• 1 cup hot milk
In a 5-qt. slow cooker, layer the ingredients in order listed, EXCEPT MILK (do not stir). Cover and cook on high for 4-5 hours or until vegetables are tender. Stir in milk. Discard bay leaves before serving. Yield: 9 servings.

Here's an easy quick recipe which I just sort of threw together on my own one day and it was actually pretty good lol -- you can play around with it to get different flavors too:
6-8 boneless skinless chicken breasts
1 can "cream of" condensed soup -- I used cream of celery, but mushroom, chicken, etc should all work
1 package dry soup/dip mix -- I used "ranch" but again, other types would work for variety
A "splash" of orange juice -- or another juice, or wine *hic* -- 's ok, the alcohol cooks out and leave sthe flavor
Put chicken in crock pot. In small bowl, mix the can of soup, the package of soup/dip mix and the "splash" of liquid (to taste, to add a little zing). Pour mixture over chicken. Cook on High 4 to 6 hours or Low 6 to 8 hours.

Chocolate Pudding Cake
18 1/2 oz package of chocolate cake mix
3.9 oz package of instant chocolate pudding mix
2 cups sour cream
4 eggs
1 cup water
3/4 cup oil
1 cup semi-sweet chocolate chips
Combine cake mix, pudding mix, sour cream, eggs, water and oil. Beat on medium speed for 2 minutes. Stir in chocolate chips.
Pour into greased slow cooker. Cover and cook on low 6 - 7 hours or on high 3 - 4 hours.
Serve with whipped cream or ice cream.

Place the artichoke hearts, spinach, cheese, mayo, sour cream, onion, garlic, and red pepper in a 5-6 quart slow cooker: mix well.
Cover and cook until the cheese has melted and dip is hot, 1-2 hours on high or 3-4 hours on low.
At the end of the cooking time stir in the lemon zest. Serve the dip warm.
Leftovers can be kept in the refridgerator for up to 3 days. Let the dip come to room temp before serving.

Cheesy Chicken
Ingredients
• 2 cups sliced carrots
• 1 1/2 cups chopped onion
• 4-6 boneless chicken breasts
* 1 16 oz block of fat-free cream cheese
• 2 10 3/4-ounce cans reduced-fat and reduced-sodium condensed cream of chicken soup
• 2 cans reduced-fat or fat-free chicken broth
• 1/4 teaspoon pepper (or to taste)
* 1/4 teaspoon hickory smoked salt (or to taste)
• 1 cup brown rice (cooked) ** can add more if you like it thicker
• 1 cup frozen peas
* 2 cups frozen corn
**can change veggies as you like**
Directions
In a 3 1/2- or 4-quart crockery cooker place carrots, onion, peas, and corn. Place chicken on top of vegetables. In a bowl stir together soup, water, cream cheese (softened), chicken broth, hickory smoked salt (a favorite seasoning of ours) and pepper. Pour over chicken and vegetables. (May add more broth and or rice if needed.)
Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4 1/2 hours. Remove chicken and cut meat into bite-size pieces; stir into cooker. Season to taste with salt and pepper, if desired.
This was one of our camping recipes that can be made in a Dutch Oven over a campfire as well. My family likes it so much that we have it at home too. It also makes a great covered dish to take to a dinner.

1. Put chicken breast in (i usually toss them in frozen) you can do this with pork ribs too...cover with 1 can of diet coke (any soda will work)and cook on low for most of the day. Take them out, drain the liquid, put back in the crockpot and add bbq sauce. cook on low until heated. (we had this one last night.) Makes yummy sandwiches or BBQ chicken pizzas.
I made this on Sunday and Dh was very impressed. When he saw me adding the can of diet coke, he just rolled his eyes. After he tasted the chicken, he was hooked. Even my kids asked that I make it again and it was soo easy. :cooldance:

Heres my easiest recipe, and we love it.
I pour into crock 1 large jar spaghetti sauce,
Sprinkle a little sugar, garlic powder, italian seasoning over sauce
drop in 8 italian sausages
layer with onion slices and peppers
Cook on low for 5-6 hrs.
Now you have great italian sausage sandwiches. You can load this up for picnics so you have a whole crock pot full. I usually make enough to either freeze some, or chop of the remaining sausages and use the leftovers for spahetti sauce.

This is a great beef stew recipe. I'm one of those cooks that puts a pinch of this and a pinch of that.
1½ pounds of stew beef cut into bite sized pieces
flour
salt
pepper
granulated garlic
water
beef base or bullion
barley
1 pint onion soup
2 bags frozen stew vegtables (the bag had potatoes, onions, celery & carrots)
Dredge stew beef in flour mixed with salt pepper and granulated garlic (to taste) and brown meat.
Place in crock pot and add a pint of onion soup NOT onion soup mix. My DH makes onion soup from scratch and we used this. If you can find canned onion soup.....it's much better than dry.
Cook on high for 3-4 hours. Add the 2 bags of vegtables and more water if needed. I added a cup of water with some beef bullion.
Leave the veggies out for an hour or so before you need to add them to the pot.
Cook for another hour and then add about 1 cup of uncooked barley. Cook about one hour checking until barley is cooked.
The barley thickens the gravy so there shouldn't be any need to add flour.
Total cooking time was about 6 hours.
I got this recipe a good while back, and I LOVE Bananas Foster. This one is great!
Bananas Foster
Ingredients:
6 bananas, peeled and cut in quarters
1/2 cup flaked coconut
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup dark corn syrup
1/3 cup unsalted butter, melted
1 tsp lemon zest, grated
3 Tbs lemon juice
1 tsp rum
12 slices pound cake
1 quart French vanilla ice cream, softened
confectioners sugar, for garnish
Directions:
Combine the bananas and coconut in the slow cooker. In a medium mixing bowl, combine the cinnamon, salt, corn syrup, butter, lemon zest, lemon juice and rum. Pour over the banana and coconut mixture. Cover cook on Low for 1 to 2 hours. To create individual servings, place one scoop of the ice cream between two slices of pound cake. Ladle the bananas and sauce over each ice cream sandwich and dust with confectioners sugar.
My family is crazy for Brownies...I found this recipe in a camping cookbook years ago. We use it a lot even when we are not camping. It is one of their favorite desserts.
Brownie Bottoms
Ingredients:
1/2 cup brown sugar
3/4 cup water
2 Tbs cocoa powder
2 1/2 cups packaged brownie mix
2 3/4-oz package chocolate pudding mix
1/2 cup milk chocolate chip morsels
2 eggs
3 Tbs butter, melted
3/4 cup water
Directions:
Lightly grease the stoneware with a non-stick cooking spray. In a small saucepan, combine the brown sugar, 3/4 cup water and cocoa powder and bring to a boil. In a small bowl, combine the remaining ingredients to form a batter. Spread the batter into the stoneware, and pour the boiling mixture over the batter. Cover cook on High for 1 1/2 hours. Turn of heat and let stand for 30 minutes before serving.
We always make homemade icecream to go with this! YUMMY!

There are some great recipes on here. Any ideas on how we can put them altogether so we can enjoy them all. I know some are sort of copyrighted because they belong to chefs or companies or whoever, but, I think we can do something about putting them all together and distributing them without charging, then thats ok. Thats just called sharing.

Here's one I made this Saturday, the kids love it and so does DH :)
Rice, Ham and Broccoli Casserole
1 pkg (16 oz) frozen broccoli cuts, thawed and drained
3 cups cubed cooked ham
1 can (10 and 3/4 ounces) cream of mushroom soup
1 jar (8 oz) reduced fat cheez whiz
1 cup milk
1 cup uncooked instant brown rice
1 celery rib, chopped
1/4 cup onion, finely chopped
In slow cooker, combine the ham and broccoli. In a mixing bowl, combine the rest of the ingredients; stir. Pour the mixture over the ham and broccoli and stir it all together.
Cover and cook on low for 4-5 hours, or until rice is tender.
About 4-5 servings.

For those of you that like Stuffed peppers, or porcupine balls, these are really easy.
1 1/2 lb gr meat
1 C rice
1 C water
1 Can tomato soup
6 Green peppers with tops cut off and cleaned out
chopped onion (to taste)
salt
pepper
garlic powder
Mix gr meat, rice, water and onion. Salt and Pepper and garlic powder to taste. Stuff green peppers with meat mixture. For those that don't like green peppers, just make a round ball. Line up in Crockpot. Mix tomatoe soup with 1/2 can of water. Pour over peppers. Cook on high for 4-5 hrs, on low for 7-8 hrs.

OK I must be using my crock pot way too much lately. I can home today after taking care of some errands and I had put a piece of beef in the crock pot. Well, when I opened the house it smelled - not of burnt meat but of burnt metal. :( It was nasty! And my piece of meat was only about half cooked. Everything went in the garbage and we had spaghetti.

No, I think the crockpot is history. After it cooled down, it was all black inside - mine had the removable crock. I am just glad that it didn't catch on fire and burn down the house we are renting. It was only 3 years old and was made my Faberware.

I have a new recipe to post :) I gave it 4 stars while Mike gave it 3 stars. So I averaged it to 3.5 stars. Of course - its from fix it and forget it lightly
Bratwursts
Makes 8 servings
8 Bratwursts
1 large onion, sliced (or you can be lazy like me and do the prediced 8oz onions from the produce section)
12 oz can of beer
1 cup chili sauce
1 Tbsp Worcestershire sauce
1 cup ketchup
2 Tbsp Vinegar
1/2 tsp salt
2 Tbsp brown sugar
1 Tbsp paprika
1. Boil Brats in water in skillet for 10 minutes to remove fat
2. Drain brats and place in slow cooker (I failed to do that and man was it nasty after 1 day in the fridge. I was scraping out the fat but at least it was easy to deal with)
3. Mix together remaining ingredients in bowl and then pour over meat.
4. Cook on low 4-5 hours.
Per serving: 160 cal, 5gms fat, 24gms carbs, .5gms fiber, 3 gms protein
On a side note brats come 5 to a pack around here so I just did 2 packs of 5 and it turned out fine.

Ok, today is the epitome of a gross fall day here & all I want to do is bake & cook (& I hate to cook)! I'm not a savvy crock potter like you all are, so I'm thankful for this thread.
One question though...is there ever a time that you can just put ground beef/turkey, chicken...well any meat really, into the crock pot w/o cooking it first? I saw the diet coke chicken & I'll try that, but I was just wondering if there really was any just put it all in there & forget it recipes??

I find its 50/50 with recipes that want you to precook the meat vs. not. I have found most pork recipes to be a no cook meat and most chicken ones to be a cook first. Maybe it has to do with the cooking temperatures and the whole salmonella issue with undercooked chicken.

I've never pre-cooked chicken before putting it in the crockpot -- it has always been fully cooked when I have followed the recipe. I would cook it for at least 4 hours high/6 hours low, though. A bone-in chicken that will fit the crockpot can be roasted without any pre-cooking, but I would not put in any liquid, or it will come out stewed. I'd say 8-10 hours on low works the best for that. I've done that and it comes out delicious and no oven mess to clean.
The recipes I have seen that do call for meat to be cooked first usually involve meat with higher fat content -- like ground beef unless it's very lean. I think ground turkey is lean enough not to require cooking & draining first. Have a great day -- *hugs* VickiB79

Hi ligrumpygirl -- I have roasted chicken without liquid. It you don't want anything to stick to the inside of the pot, you can grease the pot, use the crockpot liner that Reynolds makes or even put a small crumpled up piece of tin foil in the bottom of the pot.
For flavor, you could try a little "Liquid Smoke" to give a barbecue flavor without using a lot of sauce. Or, even if you just pour a little sauce on the top of the chicken, I think it will mostly spread out over the bird and not "stew" too much.
Lastly, I have heated up pre-cooked hams in the crockpot wrapped in tin foil -- comes out very moist and no spatters. You can add a drop of liquid smoke to that also before you wrap it up. *hugs* VickiB79

I'm a little slow on the uptake with this one, but I have a recipe to share. It sounds gross, and looks kind of gross when cooking but it really is good and very tender, and EASY!!!
Boneless pork chops
1 can healthy request cream of mushroom soup
1 cup ketchup
dash or so of worcesteshire sauce.
Mix soup, ketchup and worcesteshire together and pour over frozen or fresh chops in crock pot. Cook on low all day.
That's it!! makes kind of a pinkish sauce that looks kind of weird. DD was afraid to try it at first, but now asks me to make the pink pork chops!!
I LOVE my crock pot!!
Tomorrow I am making pot roast. I love the smell when you walk in the door at the end of the day!

I rate this one a 3 out of 5 stars. It probably would have been better had I eaten it the night I cooked it instead of refrigerating it, freezing it, and then defrosting it. Still all in all not too bad on a cold night.

1 pound frozen veggies of your choice
1 medium sized onion, diced
2 12oz jars fat-free, low sodium chicken broth, divided
1 1/2 cups low-fat buttermilk biscuit mix
1. Combine chicken, veggies, onion, and chicken broth (reserve 1/2 cup plus 1 Tbsp broth) in slow cooker
2. Cover. Cook on high for 2 hours.
3. Mix biscuit mix with reserved broth until moistened. Drop by Tbsp over hot chicken and veggies.

This is probably my favorite crockpot recipe and it's incredibly easy too!
PORK AND BLACK BEAN CHILE
1 pound lean center cut pork chops
1 (16oz) jar thick and chunky salsa (you chose mild, medium, etc.)
2 (15oz) cans no-salt-added black beans, undrained
2 chopped bell peppers (again... you chose the color of the peppers)
1 large chopped onion
1 tsp ground cumin
1 tsp chili powder
1 tsp dried oregano
¼ cup fat-free sour cream
Trim fat from pork; cut pork into 1-inch pieces. Combine pork and next 7 ingredients in a 4 quart electric slow-cooker; stir well. Cover with lid; cook on low-heat for 8 hours or until pork is tender. Ladle into bowls; top with sour cream. 4 servings (serving size 2 cups chile with 1 tbs sour cream)
379 cal/9.4g fat/14.2 g fiber/ 8 points but really worth them!

Thanks for bringing this thread up again...I just took my crock pot out of my closet and I am ready to use it tomorrow. Hopefully chicken marsala...I will post if it comes out good.

YUMMY chicken!!!! I used boneless, skinless thighs because that is what I had but I am sure you can use anything:
Chicken Marsala Recipe Ingredients
4 boneless, skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
1/4 cup of flour
1/4 cup Chopped parsley
1/2 cup Marsala wine
1/2 cup sliced mushrooms
Chicken Marsala Crockpot Recipe Directions
Mix most of the flour with the salt and pepper and cover the chicken breast in this mixture. In a skillet brown the chicken breast on both sides and place in the Crockpot. Add the wine and mushrooms to the skillet and let heat for about 10 minutes, while tossing and stirring. Sprinkle the left over flour onto the chicken breast and pour the sauce over. Allow to cook on low for 6 hours

This is probably my favorite crockpot recipe and it's incredibly easy too!
PORK AND BLACK BEAN CHILE
1 pound lean center cut pork chops
1 (16oz) jar thick and chunky salsa (you chose mild, medium, etc.)
2 (15oz) cans no-salt-added black beans, undrained
2 chopped bell peppers (again... you chose the color of the peppers)
1 large chopped onion
1 tsp ground cumin
1 tsp chili powder
1 tsp dried oregano
¼ cup fat-free sour cream
Trim fat from pork; cut pork into 1-inch pieces. Combine pork and next 7 ingredients in a 4 quart electric slow-cooker; stir well. Cover with lid; cook on low-heat for 8 hours or until pork is tender. Ladle into bowls; top with sour cream. 4 servings (serving size 2 cups chile with 1 tbs sour cream)
379 cal/9.4g fat/14.2 g fiber/ 8 points but really worth them!

I think it's okay, Heather. You can't really over-cook anything in a crock pot. If you are home it will probably be finished in less time.

I stick with the servings and measurements and then freeze what's left over once I'm bored with it.
INGREDIENTS:
* 6 c. cauliflower florets
* 2 15.5-oz cans chickpeas, rinsed and drained
* 2 large leeks, white and light green parts sliced into 1-inch pieces (1.5 c.)
* 1 c. tomato sauce
* 1/4 c. water
* 1/4 c. vinegar (or white wine vinegar)
* 2 t. ginger powder (or 2 T. minced fresh ginger)
* 2 T. curry powder
* 2 cloves garlic, minced
* 2 t. ground cumin
* 1 t. ground cinnamon
* 1 t. red pepper sauce, like Tabasco
* 3 T. chopped cilantro
* 3 c. cooked basmati rice
DIRECTIONS
Combined cauliflower, chickpeas, leeks, tomato sauce, vinegar, ginger, curry powder, garlic, cumin, cinnamon, red pepper sauce, and water in a 4-qt. slow-cooker. Season with salt and pepper. Cook on hight 3 hours, stirring occasionally.

I have a new recipe going in the crockpot today! I am super excited because it looks super yummy already without even cooking all day. I'll let you know how it turns out and try to WW point it later.
Pork Loin with Cranberry Sauce
Prep Time: : 5-10 minutes depending on how much you have to trim your loin roast
Cook Time: : 8-10 hours
Ingredients:
* 1 boneless pork loin roast, about 4 pounds
* Salt & pepper
* garlic powder (I used minced garlic as it was easier to deal with)
* 1 (1 lb.) can crushed pineapple
* 1/4 tsp. nutmeg
* 1 can whole cranberry sauce
* 1/4 tsp. cloves, optional
Preparation:
Season roast with salt, pepper, and garlic powder; place in slow cooker. Mix remaining ingredients and pour over pork. Cover and cook for 8 to 10 hours on low. Pork should be about 160° on a meat thermometer. To serve, slice and spoon sauce over each portion.
Serves 6 to 8.

Ok verdict on the pork loin with cranberry sauce: I give it a B. I thought it was fine but Mike thought it was a tad dry. I really think that he just doesn't like the taste of slow cooked pork. At any rate, if I made this one again I would cook it for 8 hours not 10 as the 10 I think is what dried it out even though I was cooking on low. I might also throw in more pineapple. :)

Pork IS really hard to cook without drying it out. I have a trick whenever i cook pork, though some might think it is strange. I actually put the pork roast in when it is still frozen in the middle. Not hard frozen, but still ice cold just in the middle. For the length of time it takes to cook, it ends up being perfectly done, not raw at all. I do the same for all my pork, chops, loins, roasts. Everyone tells me it is perfect.

I just cooked a pork tenderloin in my crockpot yesterday with a bunch of different veg and it was fall apart tender and not dried out at all...I did put in about 1/2 cup of chicken broth, maybe that helped.
My SIL cooks her pork tenderloin without adding anything and then when done, shreds it and puts BBQ sauce on....delicious pulled pork, I'm making this next!

Ok so I think Mike was just making things up. Now he claims he enjoyed it as long as it was served with rice and it wasn't too dry. I give up on his opinion when it comes to recipe evaluations.

I think the difference is between using a pork tenderloin and a pork loin. Usually it's harder for a pork loin to come out moist.
My never fail pork loin crock pot recipe is to throw a 2-3 lb pork loin (seared in a pan first) in the crock pot with a jar of Polish saurkraut. YUM! :) It comes out tender every time, I think it has something to do with the acid in the kraut.

For those of you that like Stuffed peppers, or porcupine balls, these are really easy.
1 1/2 lb gr meat
1 C rice
1 C water
1 Can tomato soup
6 Green peppers with tops cut off and cleaned out
chopped onion (to taste)
salt
pepper
garlic powder
Mix gr meat, rice, water and onion. Salt and Pepper and garlic powder to taste. Stuff green peppers with meat mixture. For those that don't like green peppers, just make a round ball. Line up in Crockpot. Mix tomatoe soup with 1/2 can of water. Pour over peppers. Cook on high for 4-5 hrs, on low for 7-8 hrs.

Here's one I made this Saturday, the kids love it and so does DH :)
Rice, Ham and Broccoli Casserole
1 pkg (16 oz) frozen broccoli cuts, thawed and drained
3 cups cubed cooked ham
1 can (10 and 3/4 ounces) cream of mushroom soup
1 jar (8 oz) reduced fat cheez whiz
1 cup milk
1 cup uncooked instant brown rice
1 celery rib, chopped
1/4 cup onion, finely chopped
In slow cooker, combine the ham and broccoli. In a mixing bowl, combine the rest of the ingredients; stir. Pour the mixture over the ham and broccoli and stir it all together.
Cover and cook on low for 4-5 hours, or until rice is tender.
About 4-5 servings.
I made this tonight and it was really good! I didn't have broccoli so I used peas and carrots and it was just fine.

8 points per serving. Makes 6 servings
Ingredients:
1 pound(s) uncooked lean ground beef (with 7% fat)
1 small onion(s), chopped
1 medium garlic clove(s), minced
28 oz canned crushed tomatoes
15 oz canned tomato sauce
1 tsp table salt
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes, or to taste
1 cup(s) part-skim ricotta cheese
1 1/2 cup(s) part-skim mozzarella cheese, shredded, divided
6 item(s) dry lasagna noodles, no-cook
1/2 cup(s) shredded Parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano
Putting it all together:
* Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic; cook, stirring frequently, breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and red pepper flakes; simmer 5 minutes to allow flavors to blend.
* Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.
* Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.
* Cover slow cooker and cook on low setting for 4 to 6 hours. Remove cover; turn off heat and season to taste, if desired.
* In a small bowl, combine remaining 1/2 cup of mozzarella cheese and Parmesan cheese; sprinkle over beef mixture. Cover and set aside until cheese melts and lasagna firms up, about 10 minutes. Yields 1/6th of dish per serving.
