I read in the tips and tricks sticky that you won't get credit if you sign up for an offer and cancel quickly. For free trials, if I sign up and change my mind on say day 6 of a 7 day trial and therefore don't pay anything does that count as cancelling quickly and I won't get credit?

It's quite possible. They have the right to revoke the credit. The best rule of thumb is to only sign up for things that you are truly interested so that if you do not get the credit, you don't feel ripped off.
