I'm so glad that you liked it! I've never tried it with pizza sauce but I bet that would be good.

We make this at our house but I use tater tots instead of french fries. My kids love it!! Sometimes I will use gound turkey instead of beef, no matter how it is made they always eat it up!

oooh I will try tater tots next time. I love tater tots but try not to buy them because I will eat them in one sitting. They are like pringles for me: Once you pop, you can't stop

I also make a similar one with tater tots:

    1 lb ground turkey
2 cans cream of mushroom soup
1 can french style green beans
    tater tots

Basically you brown the ground turkey, drain it, mix in the soups and green beans. Put it in a 13x9 pan sprayed with cooking spray and top with tater tots.

Bake at 375 for around 35-40 minutes, until heated through and tater tots are crisp.

My DH loves that one, the boys like the cheeseburger one better though!

I think Mike would be with your DH on that recipe and I'd be with your boys. I try to like green beans but I just can't get there. I will try my old faithful of peas, carrots, and corn though with that recipe and let you know how it goes.

That would probably be really good with frozen peas and carrots, kind of like a modern shepherd's pie.

Ok just reporting back that I have yet to make the cheeseburger soup recipe but it is next on my cooking list I promise! I just made cheeseburger and fries again last night and will be doing tuna helper tomorrow to get through the rest of the week then it will be soup time!

Tuna helper - usually i do the store brand mix (usually cheesy broccoli flavor) and add in 2 cans of light tuna (in water) for extra protein and a 16oz bag of frozen peas and carrots. The extra tuna and peas & carrots mixture stretches the 5 servings out to about 7 or 8 servings and thus decreases some of the salt from the package mix and gets in some needed veggies in our diets.

This sounds yummy! I was thinking I'd also try the peas/carrots/corn combo. My kids love this kind of casserole and they LOVE tater tots so it is sure to be a winner. I'll let you know the verdict when I make it

I love these recipe and healthy living forums! I love hearing other people's clever ideas

New recipe that scored a 5 out of 5 from Mike this weekend. He's very stingy with his 5's when rating recipes so you know it must have been good. LOL

From A Trim and Terrific Louisiana Kitchen by Holly Clegg

    Crawfish Casserole

    1 tbsp light margarine
    1 onion, chopped
    1 green bell pepper, chopped
    2 cloves garlic, minced
    1 lb crawfish tails, rinsed
1 can 99% fat-free cream of XYZ soup
    3 cups cooked rice
    1.5 tbsp lemon juice
    salt & pepper
    dash red pepper
1 can chopped tomatoes and green peppers (aka Rotel)
1/2 cup shredded fat free cheddar cheese

In a large pan, coated with nonstick cooking spray, melt margarine. Add onions, green peppers, and garlic. Cook until tender. Stir in crawfish, soup, rice, lemon juice, seasonings, tomatoes and green chilies. Mix well. Turn mixture into a shallow 2-quart casserole dish coated with nonstick cooking spray. Bake at 350 degrees for 25 minutes. Sprinkle with cheese and return to oven for an additional 5 minutes.

    Makes 6 servings

As prepared: 281 calories, 136mg Cholesterol, 4.8 gms fat, 15.2% Calories from Fat

Note: you can substitute the crawfish for shrimp and it will taste the same.
