Default Thanksgiving Recipes

With all my family troubles lately, DH and I have decided to just stay home and make our own Thanksgiving and if people want to come they can, if not oh well. So I need some easy Thanksgiving recipes, not necessarily easy but simple, I am not the best cook. So post your must have recipes, favorites, etc. And help me out. Thanks. DH really wants some kind of sweet potato recipe.

You'll have a great time doing Thanksgiving at your house!

Here is my sweet potato recipe (well sort of, I kind of wing it each year) that I always make. I like it and it seems to be a big hit for those who like candied sweet potatoes.

2 large (16 oz) cans of sweet potatoes ~ drain all the juice off and slice the bigger chunks in half
2 sticks of butter
2 cups of brown sugar
cinnamon

You can adjust all these amounts if you want to make less or more.

Melt the butter on low in a large fry pan. Add the brown sugar and stir all together. Add the sweet potatoes and sprinkle cinnamon all over. I have no idea how much, I just sprinkle until it looks and smells right. I think you'll know. Simmer on low for 1-2 hours. Stir often. Watch for the liquid to bubble and start to carmalize (thicken). Pour all into a baking dish and serve, or you can put small marshmallows on top and put it in the over @ 250* until the marshmallows melt and turn slightly brown.

Pumpkin Crunch-

1 29oz. can of pumpkin
1 13oz. can of evaporated milk
3 eggs, lightly beaten
1 c. sugar
1/2 tsp. salt
2 tsp. cinnamon
1 box yellow cake mix w/pudding
1/2 block butter, melted
1 c. chopped walnuts

Preheat the oven to 350 degrees. Mix together the pumpkin, milk, sugar, eggs, salt, and cinnamon. Pour the mixture into a 9x13 inch pan. Sprinkle the mixture evenly with the cake mix. Distribute the nuts over the cake mix, and drizzle the melted butter. Bake for 1 1/2 hours. Chill, Cut, and serve with whipped cream.

Hashbrown Casserole

2 bags frozen Hashbrowns (Thawed, completely)
1 can of cream of chicken
1 8oz of sour cream
1 cup of shredded cheese
Onion, salt and pepper to taste

heat oven to 350o
Put both bags of potatoes in greased 9x13 glass dish. Mix soup,sour cream and cheese together. And pour over add onion salt and pepper as desired.
Bake until potatoes turn golden and mixture is bubbly.
Let set before serving. I always top with extra cheese to dress it up and cover while it sets.

We had a good thread last year on Thanksgiving, I think I titled it "Is anyone a bigger Turkey than me?" My whole menu is on that if you need ideas, other people also contributed thier menus and some good recipes.

I love Thanksgiving so much more now that we have it at our own house with just me, DH, and the kids. So much less pressure and stress. We actually enjoy the day and our time together! Once you do it at your house alone, you may never go back!!

I think the best advice is to keep it simple! Don't overdo it and wear yourself out. Ask everyone what their favorite dish is and make those. If you don't need a whole turkey or no one likes dark meat, just do a turkey breast.

If there are any specific recipes you would like, any advice, etc. - ask away!! I love to cook and love to provide recipes.

Good luck to you guys, enjoy your family and have a wonderful time together!
