This should be fun, as well as delicious.

Heres the deal...visit MySpiceSage and NutsOnTheNet.....pick out a spice and a nut and post your favorite recipe using both of them. I'm anxious to see what great recipes we get.

Sugar 'n' Spice Nuts

Ingredients:

* 1/4 cup packed brown sugar
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon cayenne pepper
* 1 egg white
* 1 cup salted cashews
* 1 cup pecan halves
* 1 cup dry roasted peanuts
* 1/2 cup dried cranberries

Directions:
In a small bowl, combine the brown sugar, cinnamon and cayenne; set aside. In a large bowl, whisk the egg white; add nuts and cranberries. Sprinkle with sugar mixture and toss to coat. Spread in a single layer on a greased baking sheet.
Bake at 300° for 18-20 minutes or until golden brown, stirring once. Cool. Store in an airtight container. Yield: 3-1/2 cups.

This recipe utilizes two products that great premium products that you cannot find from better sources: cashews from nutsonthenet (the bigger, the better) and the delicious smoked Spanish paprika from myspicesage.com (you may never look at paprika the same again!) :)

1 lb salted cashews
3 tablespoons butter
1 tablespoon canola oil
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon smoked Spanish paprika
1/4 teaspoon crushed red pepper flakes

In a large skillet, saute cashews in butter and oil for 4-5 minutes or until golden brown. Spread on a paper towel-lined baking sheet; let stand for 2-3 minutes. Transfer to a large bowl. Sprinkle with salt, chili powder, paprika and pepper flakes; toss to coat. Store in an airtight container.

Candy Coated Pecans

1 egg white
1 dash vanilla extract
1/2 cup cinnamon sugar
4 cups pecans

Preheat oven to 275 F (135 C). Line a cookie sheet with wax paper. Spray the wax paper with cooking spray. In a bowl, beat egg white until stiff. Add cinnamon sugar and vanilla extract. Stir until smooth. Mix in pecans and stir until coated. Pour the nuts onto the cookie sheet. Bake until brown (approximately 10-15 minutes).

This is perfect for Thanksgiving and fall dinners...

SWEET POTATO CASHEW BAKE

INGREDIENTS
5 sweet potatoes, peeled and cut into 1/2 inch slices
3/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 cup butter, cut into pieces
1/2 cup coarsely chopped cashews
1 cup miniature marshmallows


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking 9x13 inch baking dish.
Place the sweet potatoes in a large pot, and fill with enough water to cover. Bring to a boil, and cook until a fork easily pierces the potatoes, about 10 minutes. Drain, and cool.
Mix the brown sugar, cinnamon, ginger, nutmeg, and salt together in a bowl. Stir in the cashews.
Arrange half the sweet potatoes over the bottom of the prepared baking dish. Sprinkle with half the brown sugar mixture. Top with half the butter pieces. Repeat with a second layer of sweet potatoes, brown sugar mixture, and remaining butter pieces.
Bake in preheated oven until potatoes are glazed with the brown sugar mixture, about 30 minutes. Sprinkle mini marshmallows over the top, and return to the oven to bake until browned, about 5 minutes more.

Apple Spice Cake

1 box Spice Cake
1 Can Apple Pie Filling
3 Eggs

Mix all together. Pour 1/2 batter into a 9x12 pan, then sprinkle with cinnamon & sugar and chopped nuts, pour rest of batter over and add more cinnamon & sugar and chopped nuts on the top.

Bake 350 degrees for 1/2 hr. Drizzle icing on top!

Ingredients:
2 skinless, boneless chicken breast halves

1. Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine the nits, seasoned salt, jerk seasoning, minced onion, onion powder and pepper. Place egg in another shallow bowl. Dip chicken in egg; coat with nut mixture. Let stand for 5 minutes.
2. In a skillet, cook chicken in oil for 3-4 minutes on each side or until chicken juices run clear. In a small bowl, combine pineapple and apricot preserves. Place lettuce on each plate; top with chicken and pineapple mixture.

Prep Time: 15 Minutes
Cook Time: 10 Minutes
Ready In: 25 Minutes
Servings: 2

Coffee Apple Cake

Cinnamon Sugar 5.00 from myspacesage
Mammoth Pecans 14.00 nuts on the net


1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1 cup sour cream
1/2 cup vegetable oil
6 apples - peeled, cored and sliced
1/2 cup white sugar
2 teaspoons Cinnamon Sugar
1/2 cup
1 cup Pecans

..DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
2.In a large bowl, stir together the cake mix and instant pudding mix. Add the eggs, sour cream and oil, mix until well blended. In a small bowl combine the sugar, cinnamon and Pecans
3.Pour half of the batter into the prepared pan, then place a layer of sliced apples over the batter and sprinkle with half of the cinnamon pecan mixture. Pour the remaining batter over the top and repeat with the remaining apples and cinnamon pecan mixture.
4.Bake for 60 to 70 minutes in the preheated oven. Cool for 1/2 hour before removing from pan to cool completely.

(not that you need this much for this recipe...I just buy a bigger amount since I put garlic in everything)
Fancy cashews I pound bag $11.00

Chicken cubed (I precook to make this a fast meal to make)
little bit of oil for cooking
6 tablespoons hoisin sauce
4 tablespoons rice vinegar
1 cup cashews
whatever veggies you like and have on hand
(sliced broccoli, onion, scallion, garlic, peas, green beans)


put a little oil in your wok, and put in the onions,scallions, garlic
then after they cook a bit add in the veggies - broccoli, peas, green beans
add precooked chicken and nuts.
and add hoisin and vinegar.

I usually precook the chicken on the weekend, and cut the veg in the morning, so this meal only takes 15 minutes to prepare in the evenings. It is one of my favorite healthy meals.

1 (8 ounce) package cream cheese, softened
1/4 teaspoon vanilla extract
1/2 cup butter (no substitutes), softened
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans


In a mixing bowl, beat together cream cheese, butter and vanilla extract until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and chill in the refrigerator for 2 hours.
Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Chill in the refrigerator for 1 hour.
Roll the cheese ball in finely chopped pecans before serving.

3 cups chocolate chips
1 1/3 cups sweetened condensed milk
1 1/2 teaspoons vanilla
1/2 cup chopped pecans

Melt chocolate chips. Stir in milk, vanilla and pecans. Spread in wax paper lined 8 in square pan. Refrigerate for 2 hours or untill firm. Turn out on cutting board. Cut into squares. Store in airtight container.

18 oz package chunky chocolate cookie dough
1 1/2 cups chopped pecans
1 1/2 cups Heath toffee bits
2 1/2 teaspoons vanilla

Remove cookie dough from refrigerator and when soft mix with other ingredients in mixer. Drop by teaspoonfuls on greased cookie sheet. Bake 8-10minutes at 350. Remove from cookie sheet to cooling rack as soon as possible.

1 ready pie crust
3/4 c brown sugar
2 T melted butter
1 slightly beaten egg
1 tsp vanilla
chopped pecans

Cut dough in pieces. Place in a muffin pan. Fill each tart to the top with pecans. Bake 20 minutes at 350. Turn upside down and pop out of pan.

Caprino Salad

Crisp mixed greens(I use Spring mix, but you can use whatever you prefer!), sun-dried cranberries and toasted spiced pecans tossed with a cranberry orange vinaigrette dressing, then sprinkled with goat cheese! MOST DELISH!

Pecans from Nuts on the Net and Jerk seasoning from My Spice Sage.
Toss the pecans in melted butter and brown sugar, sprinkled with jerk seasoning and bake.

Yield: 10 portions

Ingredients:
30 ounces Cream cheese
7-1/2 ounces Sugar
2 ounces Sour cream
4 ounces Whole eggs
¼ ounces Almond essence
2 ounces Heavy cream
¼ sheet Yellow cake or a 1 layer pie dough
15 ounces Whipped cream
1 ounce Chocolate dust for garnish
2-1/2 ounces Semisweet chocolate for garnish
7-1/2 ounces Sugared almonds
10 ounces White ganache for garnish

Method:
Grease individual molds. Roll out pie dough or cut sponge cake ¼ inch to ¾ inch thick - and line bottom of molds. Combine cream cheese and sugar in a mixing bowl. Blend in heavy cream and sour cream. Mix until smooth. Blend in eggs and almond. Mix until smooth. Pour mixture into the molds.
Bake in a water bath at 300o F. for approximately 2 hours, or until filling is set.

Serve cold and top with sugared almonds.

SUGAR ALMONDS

Ingredients:
6 ounces Sliced almonds
1 ounces Egg whites
6 ounces Sugar

Method:
Mix all ingredients together and evenly covered with egg whites and sugar. Bake at 250 degrees for 10 to 12 minutes or until golden brown.

LAMBERT CHERRY SAUCE

Ingredients:
1 cup Pureed strawberries (from fresh or frozen strawberries)
1 cup Pureed raspberries (from fresh or frozen raspberries)
1 cup Pureed blueberries (from fresh or frozen blueberries)
1 cup Pureed blackberries (from fresh or frozen blackberries) ¼ cup Sugar or to taste
1 tablespoon Water
2 cups Pureed black cherries (from fresh or frozen)

Method:
Bring fruit purees, sugar and water to a boil. Add cherry puree and stir to incorporate. Let cool before using

Ingredients:

4 half breasts (1/3 pound each) Chicken breast, boneless, skinless
1 ounce Almond breading
1 ounce Coconut Marinade

For the Salad:
6 Cups Asian Greens Mix
1 Cup Golden Pineapple, large dice
1 Cup Strawberries, quartered
½ Cup Carrots, julienne cut
12 each Mint leaves, torn in pieces
1 Cup Honey-lime Dressing
½ Cup Almonds, sliced, toasted
4 each Lime wedges, quartered
½ Cup Mango Puree
½ Cup Coco Lopez
Pinch to taste Freshly Ground Black Pepper
Pinch to taste Kosher Salt

For the Dressing:
¼ Cup Honey
¼ Cup Rice Wine Vinegar
¼ Cup Canola Oil
¼ Cup Lime juice, fresh
Pinch to taste Kosher Salt
Pinch to taste Freshly Ground black Pepper

For the Coconut Marinade:
½ Cup Whole Eggs, mixed well
½ Cup Coconut Milk
½ teaspoon Pataks brand curry paste
½ teaspoon Kosher Salt

For the Almond Breading:
½ cup Flour, all purpose
1 Cup Almonds, sliced, chopped
½ Cup Coconut Desiccated unsweetened
½ teaspoon Kosher Salt

Method of preparation:
Mix all ingredients for the salad season with salt and black pepper, mix all ingredients for dressing and add to the salad. Toss well to make sure all salad is coated with dressing.

Trim, pound chicken breast halves. Mix ingredients for marinade, place chicken in for 1-2 hours.

In a seasoned pan, place small amount of canola oil. Dredge marinated chicken breasts in the almond flour mix, sauté until golden, turn and place in a 400-degree oven and cook until golden and firm (minimum internal temperature of 165 degrees F). Season chicken with Kosher salt after removing from the oven.

Divide salad among four plates; lay chicken partially on the salad, and drizzle chicken with mango puree and Coco Lopez using squeeze bottles with a fine tip. Garnish each plate with a few toasted almond slices and a lime wedge.

ALMOND STREUSEL CHERRY CHEESECAKE

Base and Topping
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/4 cup cold butter or margarine
4 oz (half of 8-oz package) cream cheese
1/2 cup sliced almonds
Filling
2 1/2 packages (8 oz each) cream cheese (20 oz), softened
1/2 cup sugar
2 tablespoons Gold Medal® all-purpose flour
1 teaspoon almond extract
2 eggs
1 can (21 oz) cherry pie filling


1. Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. Place cookie mix in large bowl. Cut in butter and 4 oz cream cheese, using pastry blender or fork, until mixture is crumbly. Reserve 1 1/2 cups mixture for topping. Press remaining mixture in bottom of pan. Bake 12 minutes.
2. Meanwhile, in large bowl, beat 20 oz cream cheese, the sugar, flour, almond extract and eggs with electric mixer on medium speed until smooth.
3. Spread cream cheese mixture evenly over partially baked cookie base. Spoon pie filling evenly over cream cheese mixture. Sprinkle with reserved topping and almonds.
4. Bake 40 to 45 minutes or until light golden brown. Cool 30 minutes. Refrigerate about 2 hours or until chilled. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.
