oops didn't read the staying offsite part. So I'd do MK, Epcot, and AK and skip MGM.

As far as "normal" food goes Liberty Tree Tavern is good in MK, Columbia Harbor house (if you want counter service) in MK is good, Epcot -> Garden Grill, AK - not sure. There is a rain forest cafe there.
